RAGU NAPOLETANA


   Ragu Napoletano is one of the most Supreme dishes of Napoli, second only to Pizza. For some, it might be the other way around. For Italian-Americans of Neapolitan descent, this dish is without question the # 1 Most Important and Supreme dish of all. Italian-Americans, depending upon the family and what part of Italy they come from, will call this dish, either; Sunday Sauce, Gravy, or Sugo, and often there is a heated debate over the name of the dish. No matter, no one should get hung up over the name, and what you or others call it. The two most important things when it comes to this storied Ragu, is one, that it is delicious and satisfying. And number two is that it brings family and friends together at the table, breaking bread, and enjoying each other's company, the maccheroni and Ragu, and maybe a little bit of good Italian Wine. “What more could you want?”

RAGU NAPOLETANA "FREE RECIPE" from chef / author Daniel Bellino Zwicke

FREE RECIPE !!!

INGREDIENTS :

2 pound Beef Chuck

2 pound Pork Spareribs

2 pounds Italian Sweet Sausage

1 pound Pork Belly

4 tablespoons Olive Oil

1 large Onion, peeled and diced

5 cloves Garlic, peeled and chopped

4 - 28 ounce Jars Italian Tomato Passata 

½ teaspoon Red Pepper Flakes

2 teaspoons Sea Salt

1 teaspoon ground Black Pepper

1 small bunch Fresh Basil

2 Bay Leaves


Note : You can vary the meats depending on your own preference. For example, you can add Braciole, Meatballs, Pork Neck, or whatever combination of meats that you like.


PREPARATION :  

Cut the Beef CHuck into 3” large pieces and season with Salt & Black Pepper. And cut the Pork Spare Ribs into individual Ribs, and season with salt & pepper.


Place Olive Oil and Onions in a large 6-8 quart Stainless Steel Pot. Cook onions on low heat for 5 minutes.

Add the Garlic and cook on low heat for 3 minutes. Add Red Pepper Flakes and cook for another 1 minute.

Turn heat to high and add the Tomatoes. Add Bay Leaves, Salt, and Black Pepper. Add cups of water.


Bring the Tomatoes up to a boil, and lower the heat to a low flame.


Brown the Pork Ribs, cooking on medium heat. Cook the Ribs until lightly brown on all sides. Add the Ribs to the pot with Tomatoes. 

Add the Beef and cook on high heat. Cook in two batches, so the meat doesn’t get crowded. Brown on all sides. Put browned Beef into the pot with tomatoes.

Brown the Pork Belly, and add to the pot with tomatoes.

Cook these meats on a low flame for 90 minutes. Add more water if the sauce gets too thick.

Lightly brown the Sausages, and add to pop with the tomatoes, along with basil leaves. 

Cook for another 35-40 minutes on low. Turn off. Your Ragu is done.

Cook the pasta of your choice. And serve with some Tomato Sauce, and grated Pecorino Cheese.

You can either serve the Pasta (maccheroni) with Tomato Sauce as a pasta course on its own, dressed in the Tomato Sauce, and then serve the meat on the plate as the main-course, with or without a vegetable on the side.

Or you can put the pasta and meat together on one plate, in one course, rather than two.

Serve grated Pecorino or Parmigiano Cheese on the side.


Note : Most of the time the Pasta served with Sunday Sauce is short-maccheroni pasta, not long pasta like spaghetti, though occasionally it might be. Enjoy.

   Frittata, they’re quite a wonder. Italian Flat Omelets that are tasty, versatile and easy to make. I’ve been making them for years. They’re one of my favorites. Frittata are quite versatile. You can fill them with a endless variety of ingredients, both fresh made or leftover, and this is one of the great uses and attributes of this Italian wonder, The Frittata. Americans are just recently learning about them. Italian Americans have known of, made, and have been eating Frittata in many forms for years. In the past several years you see them popping up in cafes, delis, and restaurants as the rest of American is now catching on to what Italian-Americans have known for years.    There are several different ways to eat and use Frittata. You can make a small one with two or three eggs and what ever filling you choose like Spinach and Parmigiano or Mushrooms and eat the whole Frittata for one person for lunch or dinner, with or without a green salad on the side.    The best and most useful use of Frittata is to make a large one using 8 to 12 eggs and whatever filling you choose. My favorites are Sausage & Pepper, Broccoli with Goat Cheese or Fontina, and the Spaghetti Frittata that has a cute little story behind it with me and my Aunt Fran. Anyway, when you make one of these large Frittata, the great thing is that you let it cool down, serve it at room temperature, cutting the frittata into wedges and eating it this way. A wedge of frittata can be a antipasto item on its own, part of a mixed antipasti misti, or my favorite, pulling a already made frittata out of the refrigerator and just cutting off a wedged shape piece and eating a piece any time day or night when you are hungry and need a little snack.    Frittata are great items to include in a picnic, at a barbecue, and are especially goo if you’re on a long road trip in the car, in a bus, train, or plane, a piece or two of frittata is great to bring along. If you’re on a plane, get hungry, and you have a wedge or two of frittata with you, you’ll be happy as heck that you brought it along. Yes they make great travel food, The Frittata. Keith Richards Shepherds Pie Recipe



KEITH RICHARDS SHEPHARDS PIE

3 lbs. Potaotes, peeled and diced
1 tablespoon Butter
Salt & Pepper to taste
2 large onions, peeld and chopped
2 lbs. Ground Beef
2 large Carrots peeled and diced fine 1  - 12 ounce can beef stock and 12 ounce water
1 tablespoon Cornstarch

PREPARATION:
1.   Put potatoes in a pot of water, bring to boil, then lower to a steady simmer and cook until potatoes are tender. Drain potatoes when done cooking.

2.   Mash potatoes with a potato masher. And butter, salt, & pepper and mix with wooden spoon.   

3.   Cook carrots in boiling water for 4 minutes, then drain in strainer or colander.

4.  Add beef to a large skillet with 4 tablespoons oil. Add oniesn, cook 3 minutes. Turn heat to high and start cooking while mixing with a wooden spoon. After 2 minutes turn heat down to medium flame. Cook beef until the beef has lost all its raw color.

5.   Add carrots, beef stock, water, and cornstarch and stir. Bring liquids up to the simmer and cook for 10 minutes while stirring.

6.   Pour Beef Mixture into a glass or ceramic casserole or pie dish. Top with mashed potatoes, adding a few dollops of butter over top of potatoes.

7.   Bake in a 375 degree oven for 15 minuts. Ket cool slight for 5 minutes before serving, then do as Keef does and Enjoy !!!

Mastering The Art of French Cooking by the late great Julia Child is the # 1 Best Selling
French Cookbook of all-time. Nothing comes close. It was co-authored by Simeone Beck

Powell's blog caught on and become a phenomenom that caught the attention of Ephron who wanted to make it into a movie.
